That seems to make sense. Very glad you are working on improving this,  
thanks :-). If nobody else objects, I'd say go ahead with this.

Maybe make the "unknown" row yellow?

Looking at <http://wiki.scummvm.org/index.php/ 
The_Curse_of_Monkey_Island>, this uses a different format, with  
another row titled "game variant" -- which actually is redundant for  
CoMI, because there were no variants other than language ;-). So that  
column could just be removed.
OTOH, that table is missing most ports... Note that COMI doesn't work  
on various ports due to screen/memory limitations. This also holds for  
Full Throttle, The Dig, Broken Sword 1/2.

And on <http://wiki.scummvm.org/index.php/Maniac_Mansion> it is yet  
again different, here, there are two gables (one for the "general"  
status of various game variants, and another per platform, but not  
stating which variant(s) this refers to). It's OK to have these two  
tables, but there should be a clear comment under "Platform  
Compatibility" that states something like: "The following table  
applies to all game variants listed above, with the limitations listed  
in the game variants table" or so (well, this could certainly be  
better phrased, I am just trying to convey the general idea :-)
