[Scummvm-devel] Updated Wiki Page for Engines

I've redone the first group (Stable Engines) taking your comments into
consideration. If this is more to everyone's liking, I'll clean up the rest
and replace the main Engines page (as per Eugene's suggestion).
If there are still reservations, I'm happy to leave this in the hands of a
more capable designer than myself :P
