Comment:

 The instructions are actually correct and include `--disable-theoradec`.
 The option was renamed from `--disable-theora` 7 months ago (in commit
 52dcac9fc).

 If you are trying to build version 2.5.1 (or older), then indeed it was
 still using the old `--disable-theora` option, but in that case you should
 be looking at the documentation for that version (and it correctly uses
 the `--disable-theora` option):
