 This looks like an issue in how ScummVM is setup in your system, I don't
 think it is even related to the Ultima engine.

 You should check the settings in Global Options -> Graphics, which apply
 to all games/engines, and the overrides in Game Options... after selecting
 the Ultima entry in the game list.

 The game is 640x400, meaning that if you want to play it with a 3x scaler
 without stretching you need a window/screen at least 1920x1200 (1920x1440
 with aspect correction)
